A Week of Pinterest Meals

Reader Submission for the Pinstrosiversary Challenge:

Pinterest Week

Who has a Pinterest account?  I got one probably a little under a year ago, and go through spurts of activity on it.  However, I find that I have a hard time integrating meals, crafts, etc into my daily life.  So Jeff and I set last week as our Pinterest week - all of our meals were Pinterest recipes.  I'm pretty proud of how all of them turned out, so here's our week in review.

SUNDAY

On Sunday we decided on Spaghetti Loaf.


The recipe was simple enough - Make spaghetti, add sauce, and then wrap it all up into a loaf of bread.  Here's our try:


Nailed it!!!  The recipe called for you to put egg whites an the top, but we don't own a pastry brush thing, so I just poured it on the top before I put on the garlic and Italian seasoning, which is why the top looks a bit wonky.  But overall it was REALLY good - especially the top.  We found it was a bit dry and needed more sauce once it was cut, but overall it is definitely something we'll make again.  Because at it's root, it's really just spaghetti and breadsticks, but wrapped together.  It's a cheap meal that's fancier than plain spaghetti.

MONDAY

Our plan for Monday was Bacon Avocado Grilled Cheese sandwiches.


However, if you've read this post, you'll know we ended up with this:

TUESDAY

Bacon Mac and Cheese.  The Pin:

Alright, so this recipe called for 8 oz of uncooked macaroni, which is only like, 1 cup.  Neither Jeff nor I thought this was going to be enough, so we TRIPLED the recipe!!!  That was maybe not the very best thing we could have done, but it actually ended up being ok.  Instead of an 8x8 pan, we had a 9x13 pan full of the stuff.  We ate about half of it for dinner, then again for lunch the next day.  Here's ours:


The ONLY thing I would do differently if we made this again was that I would buy shredded cheese.  I'm not entirely sure what happened, but we didn't have enough shredded cheese, so I was shredding a TON of it in a frenzy before the other things boiled.  Not worth it.  Also, it needed more bacon... but I feel like that goes without saying.


WEDNESDAY

Wednesday we went for the big money - Chicken Pot Pie!!!  Here's the pin picture:

The only time I've ever made chicken pot pie I think was in a college cooking class my first semester... Wait.... that actually might have been chicken noodle soup.  In that case, I've never made chicken pot pie.  However, being somewhat of a connoisseur of pie (but mostly its crust), I decided to give it a go.  Here's how ours turned out:

We were in somewhat of a hurry (so we could go back to Urgent Care to get Jeff's hand checked out), so we cut into it while it was still REALLY hot, which made the insides pretty slippery.  I don't know if you can tell, but the crust on my plate is pretty much all empty, and the filling is all next to it.  We also don't own a pie server spatula, but that was only part of the problem. )  However, once it cooled down it got better.  I also made the crust wrong (here's to reading the directions BEFORE just dumping all of the ingredients into a big bowl... embarrassing, especially after the connoisseur comment), but it turned out alright.  Again, both of us had this for lunch again the next day, and it was just as good the second time as it was the first.  It was actually really easy to make the filling, and then it only needed to be in the oven for a short time, so this is definitely a recipe I'll use again.

THURSDAY

We had so much food in our refrigerator by Thursday that there was no more room left - so we had leftovers!!!  It was all so good... again.

FRIDAY

So, Friday night is Date night, but we still are too poor to go out to eat, so we try and have something cool for dinner.  95% of the time it's pizza in some form (regular pan pizza, pizza rolls, calzones, stuffed crust, etc), but this week we switched it up; Orange Chicken!!  Here's the pin:


I have never ever fried chicken before, but I could not believe how easy it was!!  The pin was for a crock pot recipe that you make your own Orange sauce and let it cook for 7 hours.  Well, we don't have a crock pot, or 7 hours to let things cook, so we just pulled out our Panda Express Orange Chicken sauce and we were good to go.  This meal seriously took 15 minutes, and it was AWESOME.


SATURDAY

I had to shoot a wedding on Saturday, so Jeff and I didn't get to eat dinner together.  However, we had one and a half browning avocados in the refrigerator, so for lunch we decided to try our Monday disaster:

These little babies were worth the wait.  If you ever want to have the best lunch ever, have a Bacon Guacamole Grilled Cheese Sandwich.  A - freakin - mazing.

So there you have it good people.  A week solid of Pinterest recipes!!!  We'll probably keep doing this (making Pinterest meals I mean - there are just so many great ideas and recipes and they all look SO GOOD!!!)  However, I don't know if I'll blog about it - I don't really care for taking pictures of my food before I eat it.  It's a lot of work, and a lot of pressure.
