Strawberry Shortcake Muffins

Reader Submission for the Pinstrosiversary Challenge:

Apparently I really like muffins, as this is my second muffin submission. JThese “Strawberry Shortcake Muffins” are healthy, unprocessed muffins made from oats. I would also call this one a “Pin-possibility”. It’s a “win” in that the possibilities for this batter are endless! And they didn’t taste too bad (my kids loved them!). However, strawberries always make for a doughy batter, so I had to cook them, then flip them over and cook them a little longer, just to make sure they were done all the way through (I may have over-done it). Also, they stuck to the muffin tin pretty badly, even though it was greased (the recipe calls for foil cupcake liners, which I didn’t have). Next time we’ll try apples and cinnamon or blueberries. J
