Scrambled Pancakes

I figured these would be easy – 2 ingredients, right? The first problem came when the directions said to “mash banana.” Don’t bother, just throw everything in a blender. You will thank me.

I used butter because I didn’t have PAM. My real problem came at step 6: Flip. I don’t know if it was the butter, the batter, the spatula, the pan, or my own incompetence, but I ended up with this:


Yes, one looks like a pancake, because I burned it. The rest are a cross between pancakes and scrambled eggs. By the time I finished using all the batter, most of them were cold, so I stuck them in the microwave.

After adding butter and syrup, they aren’t bad. They taste like bananas, and they taste like pancakes, which sort of makes it a win.
I would love to see someone else attempt this so I can figure out where I went wrong…  I may just need flipping practice.

  1. Oops! I've definitely made food recipes like that before. In fact, most of my pancake recipes turn out that way.

  2. My guess is the pan was too hot. The pancake needs to be able to cook evenly all the way through and having a too hot surface causes the bottom to burn (and stick) before the middle is done. Try a lower temperature and maybe let the pan heat for a little bit so the temperature is even.

  3. I agree that the pan was probably too hot. To test if the pan is ready, a drop of water should "dance" on the surface, not sizzle and evaporate immediately. Also, a little oil is better than butter because it doesn't burn as quickly. Hope you try it again. The recipe sounds good.
