The Em-Life: Keeping Up Appearances Day 4

To start this off...to tell you how very un-Pinterest-perfect I am, this is the second time I have written this piece. My computer got all jumbled and I accidentally erased this post with no where to be found the day before it was supposed to be posted.
It physically hurts me that I have to do this again. I feel like I am in Groundhogs Day. Poop. Rant over, let's see how my day went!

Yesterday was rough to say the least, I was feeling defeated and like I should just go back to real life and give up. Today I woke up and wanted to give it another try, today is date night after all and I had  really been looking forward to it all week! Let's see how this goes!

Chip goes to school full time and works two jobs at the university so I thought a "Chip's Favorite Things" date night would be fun for him, just to show him how much I appreciate how hard he works.
For the menu I decided on paleo tacos. Chip LOVES tacos! As much as I love Mexican food, I am not a huge fan of tacos, so I don't make them very often. This would be a big surprise and treat for him!
Next, Chip LOVES Batman, to which he will reply "I am Batman" haha
I went out and specifically bought Batman and Robin the movie (my favorite Batman movie, I figured I should enjoy it too) and we watched it while we ate our tacos.
Next, Chip loved to build forts as a kid, but had never built blanket forts, (What?! Right!!!!), so for our "date night activity" we built a blanket fort, ate the paleo brownies from the night before and just hung out. It was really fun!

His first attempt at a blanket fort went great! He's a natural, I have a feeling that this won't be his last foray into fort making in our living room.
What I normally wouldn't show, if I was trying to portray a social media perfect life, are the following attempts at date night photography:

The dog joined us, and then Chip yawned for the next 15 pictures haha Not to mention this isn't the most flattering picture of me, but it is a funny picture!



For the paleo tacos I made the beef which was a feat in and of itself. It took me ALL morning to get this thing going, only leaving me with 10 minutes to get ready for work ( I had to skip my shower, sorry coworkers!), but by golly I did it! This baby needed to cook for 6+ hours and if I hadn't have got it into the crock pot in time, we would have had to do something different for dinner!

I also made the homemade paleo tortillas which weren't as hard as I thought they would be, and I made the chipotle sauce which turned out a funny consistency but was yummy anyways.
It was WAY more cooking than I am used to doing, and I didn't finish everything until about an hour AFTER Chip got home which kind of bummed me out because I was really hoping to surprise him with everything when he got home all ready to eat and done. Such is life! I finished and we ate and it was delicious!

I also bought almond cheese for these and it wasn't too bad!

I wish I could say that I made the juice, but who am I kidding, this was hard enough to finish as it is! To make everything in this meal by hand, (minus the cheese), was SO much work! I definitely was surprised at how much this took as far as time and effort went, so the juice I bought in a bottle and just put it in the glass, I added the strawberry to make it more Pinteresty.

I am happy that today went so much better than yesterday, but I didn't do my squats, (again), didn't get a work out in, forgot half my water, and didn't do any beauty or cleaning pins. *sigh* This "perfection" thing feels like it is sprinting in front me as I sit on the side lines eating bon bons slack jawed and waving.

I can stick through this! Check in tomorrow to see how I do!

  1. Hint on the crock pot - when I have to go to work and I want to cook something in the crock pot, I prepare things the night before. Often I'll place a crock pot liner bag in a large mixing bowl, add all the ingredients, then cover and place in the refrigerator, and I set out the crock pot when I finish up the nightly dishes. Then in the morning, all I have to do is transfer the stuff in the bag in the fridge to the crock pot, set it as needed, then head off to work!

    1. Super great idea! I have a removable liner and will sometimes put that in the fridge, but the liner bag is another great idea for those days when I don't have room in the fridge for a giant crock.

    2. I was about to suggest the same thing! We've even put the whole crock in the fridge before, and pulled it out in the morning. We haven't had any issues with the crockpot changing temperature too quickly (though we always cook on low when we aren't going to be home).

  2. I love your fort idea. Reminds me of an episode of The Big Bang Theory where Sheldon and Amy build one, what fun! I can't believe you made your own tortillas! I'm Hispanic and I don't even make them, hahaha! I have made them of course and I know what work they can be. I'll have to check out these paleo ones and see what they are like. Your version of those tacos still look delicious!
