Apple Fitter Muffins

I was a little nervous about making these for the first time for other people but my church was having a brunch pot luck and I thought it would be perfect. These took a little longer to make then I thought they would and I was doing it on one foot as I am recovering from minor foot surgery but thankfully they came out great and were a hit at church!
